Director Food & Beverage

About the role

The Director Food & Beverage will lead all culinary and beverage operations across six outlets at the newly opened Fairmont Golden Prague, a luxury heritage hotel. Reporting to the Director of Operations, you will shape the guest experience, drive profitability, and elevate the property to become the premier dining destination in the city.

Key responsibilities

• Plan, direct and oversee all food and beverage operations, ensuring exceptional guest service and financial performance.
• Develop and monitor annual operating, marketing, sales and capital budgets, delivering accurate monthly, quarterly and yearly financial forecasts.
• Analyse revenue and cost trends, implement strategies to maximise profitability and meet budget targets.
• Lead capital projects for F&B outlets, from concept through execution.
• Inspire, coach and develop F&B managers and teams, fostering a culture of belonging, excellence and integrity.
• Maintain the highest guest satisfaction scores by monitoring service standards, Forbes and LQA metrics, and driving continuous improvement.
• Ensure full compliance with hotel operating controls, health & safety regulations and brand standards.
• Create and refresh menus, wine lists, promotions and service concepts, staying ahead of industry trends.

Required profile

• Proven senior leadership experience in food and beverage management within luxury hotels or high‑end restaurants.
• Strong financial acumen with a track record of budgeting, forecasting and profit optimisation.
• Demonstrated ability to develop and motivate high‑performing teams.
• Excellent guest‑focus mindset and a visible presence on the floor.
• Deep understanding of hospitality standards, compliance and brand excellence.
